This dressing was absolutely gross. It has way too many spices in it, I scaled it down to 10 servings and put it on top of a greek pasta salad, but I ended up not using all it made and I only added about 1/2 the red wine vinegar it called for or it would have been way to sour.

On a better note, today I made cucumber sandwiches. I never had them before, ever. I would say they are good, but not something I would crave or eat all the time. They have a nice light fresh flavor. I used fresh dill and butter bread with the crust cut off, but otherwise I followed this recipe to make them.

Bruschetta

I made this Bruschetta over the weekend. I would say it turned out good, it could have used more garlic, I preferred the tomato mixture cold, so next time I would brush the bread with garlic and oil and melt just the cheese on the bread and scoop the cold tomato mixture on afterwards. Pretty good though.

Lentil Soup

I made lentil soup for the first time yesterday, it turned out yummy. The only changes I made to the recipe were using 5 cups veggie stock and 3 cups water instead of all water. The soup came out thick instead of watery which I was surprised about. It has a great flavor and is very healthy since it’s a vegetarian soup. I also got a pair of plastic food safe gloves because I was sick of my hands smelling like garlic for a week after chopping it.


Sweet Potato Fries

I read this about how to make sweet potato fries. I made some changes to emulate a restaurant that went out of business a few years ago that had amazing “Sweet Potato Sunspots” so I made them round. That site says to cook for only 15 minutes, but I ended up cooking for way longer 35 minutes and they really aren’t crispy, but they didn’t brown or darken at all, which is good! Then I just put brown sugar, a little bit of salt and the caramel sauce (stuff for ice cream in a squeeze container). I wanted a little bit more of a coating, so either I should use more cornstarch, some other coating, or deep fried them. I soaked them for an hour in water like the site says, I think I put more cornstarch on then recommended already, but they were not hardening on the outside, they were just sticking to my cookie sheet? So I don’t know, I might look for some other recipes that suggest some seasoning. I debated whether to put some cinnamon on too, but I didn’t want that taking over the flavor. I would give them 4 out of 5 stars, but with some testing and modifications I’m sure they could be perfect. I’m making them for the second time on Saturday.

Ranch Dressing

I’ve been on a quest to make ranch dressing. I just made this recipe, and OH WOW! It’s amazing. I hate all the bottled ranch dressing, they never taste as good as in restaurants. I didn’t have any buttermilk at home, so I just used whole milk, but I highly recommend trying it if you want to make your own ranch!


Fruit Salsa and Cinnamon Chips

Today I made Fruit Salsa and Cinnamon Chips. For the “salsa” combine strawberries, blueberries and apples with apricot preserves and the chips, use butter cooking spray and coat with cinnamon sugar bake for about 10 minutes at 350 degrees. The only thing I don’t like is that that bottom side of the chips look greasy from the spray and tons of the sugar mixture came off on the baking sheet. But everything tastes good.

Kale Chips

I made the pasta dish I previously reblogged over the weekend. I had a little bit of left over Kale and decided to try Kale chips that I always see people talk about. I had never eaten Kale before, Here’s a picture of the Kale chips, they didn’t taste like “chips” at all and they were too vegetable tasting for my liking, it was almost like you were eating dried parsley or something, they aren’t thick enough to be substantial. I don’t understand how people give them good reviews. The Kale was okay mixed in with the pasta though, then it wasn’t overpowering and I didn’t mind it. I’d add it to other vegetable dishes, but I wouldn’t eat it on it’s own.

Bachelor 2012 Spoilers

Have you been watching the Bachelor this season with Ben? I usually don’t like the male version of the Bachelor because I find the women’s behavior scandalous. But I have been pretty entertained this season. I’ve read spoilers online that Ben chooses Courtney! I can’t wait to see if they are still a couple “after the final rose”. ha ha.


I found this great recipe today and I can’t wait to make it for dinner tomorrow!

The Scrumptious Pumpkin
